Saki Ishibashi, Ran Liu, Masahiro Moritaka, Susumu Fukuda, Analysis of middle-income consumers’ preferences in Hong Kong towards Japanese vegetables shipped by sea, International Symposium on Agricultural, Food, Environmental and Life Sciences in Asia, 2018, 2018.11, Hong Kong is one of the most important destination countries for Japan aiming to further increase exports of its agricultural products. Success in promotion of Japanese fruits in the region especially has helped popularity of Japanese foods and further expansion of export items in fruits and vegetables is expected. Considering, however, that there still remained challenges on stable production of fruits and that other countries have also been developing production of high-quality fruits, it is important for Japan to expand exports of not only fruits but also vegetables (Kubo, 2016). We also need to obtain middle-income consumers in addition to upper-income ones in order to further expand the market share in Hong Kong (Shimowatari, 2015).
We had an interview with two local logistic companies in Hong Kong in February 2018 and found out some vegetables which are expected to acquire more demand if their prices go down. Current prices of Japanese vegetables in Hong Kong are multiple times higher than products from other competing countries. Switching from air transport to maritime transport lowers the cost approximately to one tenth (Hatae, 2017). Maritime transport however takes much longer time and the container cannot be fully loaded if the amount of order is not enough so that several items have to be loaded together. The best condition to maintain the quality differs depending on the item and mixed loading in the same condition may cause quality deterioration of the products, which can influence on the demand.
This research, in order to examine possibility for Japanese vegetables shipped by sea to be able to compete with products from other countries, finds out local dietary habits, recognizability and evaluation for Japanese agricultural products using a survey conducted for middle-income consumers in Hong Kong. It also predicts demand change considering not only depreciation but also possibility of quality degradation caused by maritime transport. Specifically, we reveal willingness to pay and the determinant attributes by multiple regression analysis and formularize a response function model when the prices go down, which tells us how much we need to lower the cost..
