β-カロテンやポリフェノールなどの植物性化合物（ファイトケミカル）は抗酸化作用をもち、飼料を介してウシが摂取することで、免疫機能、繁殖機能の維持に寄与しています。ウシにおけるフィトケミカルの作用機序とその効果を明らかにし、日本の植物基盤を有効活用した持続可能な黒毛和種の飼養管理技術の確立を目指しています。
